Zucchini Corn Pizza

I'm mourning summer as we enter the second half of August and begin the slow slide into fall and winter. This was a pretty lackluster summer weather-wise. More cool, rainy days than warm, sunny ones. Less pool time than I'd like. This seems to happen every few years, unfortunately.

One good thing to come out of the cooler weather was this Zucchini Corn Pizza. Holy guacamole. A local pizza joint serves a similar pie - roasted zucchini, roasted sweet corn, poblano sour cream, hot pepper flakes, salt, pepper, olive oil, mozzarella - that we love so I wanted to try making it at home.

Zucchini corn pizza

Even Katie, who's not the biggest zucchini fan, loved this. If you've got a bumper crop of zucchini in your garden this is a great way to use up at least one.

Zucchini Corn Pizza
As seen on Damn Delicious

1 tablespoon olive oil
1 tablespoon unsalted butter
2 cloves garlic, minced
1 medium zucchini, cut into 1/4-inch thick rounds
1/2 cup corn kernels (fresh, frozen, or canned)
1/2 teaspoon Italian seasoning
Kosher salt and freshly ground black pepper, to taste
1/2 ball pizza dough
8-oz shredded mozzarella cheese
1 cup ricotta cheese
fresh chives, snipped
crushed red pepper flakes, to taste

Place a pizza stone in the oven and preheat to 500 degrees.

Melt oil and butter in a large skillet over medium heat. Add the garlic and cook, stirring frequently, until fragrant, about 1 minute. Stir in the zucchini, corn and Italian seasoning. Cook, stirring occasionally, until zucchini are tender, about 3-4 minutes. Season with salt and pepper.

Lay a piece of parchment paper the size of the pizza stone on a work surface. Dust lightly with flour and roll out the pizza dough into a 12- to 14-inch circle. Top with the mozzarella and zucchini mixture. Add dollops of ricotta and spread them out a bit.

Transfer the pizza on the parchment paper to the pizza stone. Bake for 10-15 minutes, checking often to make sure the cheese is melting and browning. Remove the pizza from the oven and allow it to rest for 5 minutes before slicing. Serve garnished with chives and red pepper flakes, if desired.

Smoked Salmon Pizza

I'm not sure how or when I came across this recipe for Smoked Salmon Pizza, but every time I looked through my huge stack of printed recipes I'd see it. While we're on the subject, yes I print recipes I want to make because I like having a hard copy in front of me while I'm cooking so I can make notes. And yes, I desperately need a better filing system than stuffing the pile of papers into a reusable grocery bag.

Ahem.

Smoked salmon pizza

I've been eyeing up this recipe for a while but I could never find a good time to make it. Then our friends invited us over for brunch and I finally got a chance to try it. As an aside, I love that my friend didn't blink when I asked if I could use her kitchen, or when I busted out my pizza stone, parchment paper and all the various toppings I'd put in individual containers.

This was a cinch to make and I loved the crispy pizza crust with the luscious smoked salmon, salty capers and the tang of the red onion. Next time I think I'll swap the sour cream (which I subbed for crème fraiche) for cream cheese to make it more like a bagel, while also adding some of the same seasonings found on my favorite bagel of all time, the everything bagel. I hear Trader Joes makes an everything bagel seasoning blend. I really need to get my hands on some of that!

Our Best Ever Smoked Salmon Pizza
Modified from Spoon, Fork, Bacon

1/2 a ball of pizza dough (homemade or store bought)
Olive oil
1/2 cup cream cheese, sour cream or crème fraiche
4oz sliced smoked salmon or lox
Thinly sliced tomato
Thinly sliced red onion
1/4 cup capers, drained
1/2 cup baby arugula
Lemon juice
Salt and pepper, to taste
Dried dill

Preheat the oven to 425°F with a pizza stone on the center rack.

Roll out the dough on a piece of parchment paper dusted with flour. Pierce the surface all over with a fork and brush with small amount olive oil. Remove the pizza stone from the oven and transfer the parchment paper to the stone. If you have a pizza peel (I really need to get one of these) just put the pizza dough directly on the heated stone.

Bake for 10-12 minutes or until the crust is golden brown and crisp. Remove from oven and allow crust to cool a bit before adding the toppings.

Spread the cream cheese/sour cream/crème fraiche on the crust and top with pieces of the salmon and tomato. Sprinkle on the red onions and capers. Toss the arugula with some lemon juice, salt and pepper and add that to the pizza. Add a sprinkling of dill, cut into wedges and serve.

Pulled Pork Flatbread Pizzas

The last time Steve made pulled pork, we had some left over. I'd had this idea of making flatbread pizzas in the back of my mind for a while, so I squirreled it away in the freezer for another time. That time finally came last week. I even had some leftover BBQ from our favorite spot, Sweet Lucy's in Philly.

Pulled pork pizzas

I wasn't planning to blog these, but I posted photos on my personal Facebook page and on Instagram. I had a few people ask me for the recipe, so I promised I'd throw this blog post together. This is more of a method than a recipe. I don't have measurements and I've never blogged the pulled pork recipe Steve uses, so I hope what little I've got for you guys below will work for those who asked!

Pulled Pork Flatbread Pizzas

Butter
6 flatbreads or naan
Leftover pulled pork
Your favorite BBQ sauce
Grated Monterey Jack cheese
Grated mozzarella cheese
Thinly sliced red onion
Fresh cilantro, minced

Preheat the oven to 350 degrees.

Butter both sides of the flatbreads. Heat a grill or grill pan over medium heat. Add the flatbreads and cook, turning occasionally, until each side is browned and slightly crispy. Remove to a baking sheet and repeat with the remaining flatbreads.

Mix the pulled pork with some BBQ sauce, to taste.

Sprinkle some Monterey Jack and mozzarella on each flatbread. Divide the pulled pork evenly among the flatbread. Top each with some of the sliced red onion, followed by more of the cheeses.

Put the baking sheet in the oven and cook until the cheese melts, about 10 minutes. Remove from the oven, sprinkle each pizza with fresh cilantro and cut into pieces. Serve immediately.

Restaurant Knockoff: Roasted Potato and Rosemary Pizza

There's a place near my house called Jules Thin Crust. It's a cross between pizza and a flatbread, loaded with all sorts of delicious toppings made with fresh, organic ingredients. We love going there in the warm months when we can grab a few slices and sit on their outdoor patio.

Roasted potato and rosemary pizza

I finally got around to harvesting my rosemary recently and decided to try to recreate one of our favorites from Jules - the Veggie #3: sliced roasted organic potatoes, sour cream, parmesan, rosemary, scallions, mozzarella. I have to say, my homemade version was spot on. So, so good. We inhaled it and it even reheated well the next day for lunch.

Roasted Potato and Rosemary Pizza
Inspired by Jules Thin Crust

3-4 medium Yukon gold potatoes, scrubbed clean
olive oil
4-6 sprigs fresh rosemary, leaves finely minced
garlic salt
1 lb. pizza dough
flour, for dusting as you roll out the dough
grated pecorino cheese
2 cups grated mozzarella cheese
sour cream
half-and-half or milk
scallions, finely chopped (optional)

Preheat the oven to 350 degrees.

Slice the potatoes about 1/4-inch thick. Drizzle a large baking sheet with about 1 tablespoon olive oil. Arrange the potato slices on the baking sheet. Drizzle with more oil, about half the rosemary and a good sprinkling of garlic salt. Place the baking sheet in the oven and cook for 20 minutes.

Once the potatoes are done, remove from the oven and set aside until you're ready to top the pizza. Place a pizza stone on the middle rack of your oven and increase the oven temperature to 500 degrees.

Sprinkle a square of parchment paper the size of your pizza stone with flour and roll the dough into a 14-inch round. Top with some grated Pecorino cheese and then the mozzarella. Arrange the potato slices on top of the cheese, then sprinkle with the remaining rosemary and some more garlic salt.

Transfer the parchment paper to the preheated baking stone and bake for 10-12 minutes or until bubbling and golden brown.

While the pizza is cooking, put some sour cream into a squeeze bottle and thin it with half-and-half or milk. When the pizza is done cooking, remove it from the oven and drizzle with the sour cream sauce. Top with freshly chopped scallions, if desired.

Pizza Fridays: Pizza with Ground Pork, Leeks and Rosemary

I had 8oz of ground pork in the freezer and absolutely no idea what to do with it. Then Coleen posted this Pizza with Ground Lamb, Leeks and Rosemary and I figured I could sub pork for the lamb.

pizza with pork and leeks

I forgot to season the pork with salt and pepper while it was cooking, but otherwise this was a pretty good pizza. I really enjoyed experimenting with different toppings this winter and I'd definitely make this one again. Now that it's warm I'll be switching to flatbread pizzas or burgers on Fridays since cranking the oven to 550 degrees when it's 90+ outside isn't appealing.

Pizza with Ground Pork, Leeks and Rosemary
Slightly modified from The Reheaded Baker

8 ounces ground pork
salt
freshly ground black pepper
2 tablespoons olive oil, divided
1 leek (white and light green parts only), rinsed, halved and sliced 1/4-inch thick
1 lb pizza dough
1 (14-ounce) can diced tomatoes, drained
Pinch of red pepper flakes
shredded mozzarella
2 stalks fresh rosemary

In a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add the ground pork and cook, breaking up clumps with a wooden spoon or spatula, until fully browned. Season with salt and pepper. Remove from the skillet to a paper-towel-lined plate to drain the fat. Wipe out the skillet.

Heat the remaining tablespoon of oil in the same skillet over medium heat; add the leeks and a pinch each of salt and pepper, and cook, stirring frequently, until the leeks are soft, about 8 minutes.

Place a pizza stone in your oven and preheat the oven to 475 degrees.

Season the diced tomatoes with pepper and red pepper flakes. Strip the rosemary leaves off of the stems; discard the stems. Roughly chop the leaves.

Lay a sheet of parchment paper the size of your pizza stone on a work surface. Lightly dust with flour. Roll or stretch the dough into a 12- to 14-inch circle on the parchment paper. Spread the tomatoes in a thin layer over the dough, leaving a half-inch margin around the outer edges. Sprinkle half the mozzarella over the tomatoes, then sprinkle on the chopped rosemary.

Transfer the pizza to the hot pizza stone. Bake for 8-10 minutes, until the cheese is bubbling and the crust starts to appear dry. Partially remove the pizza from the oven, very carefully sprinkle the ground pork and leeks over the pizza, then sprinkle on the remaining half of the mozzarella cheese. Return the pizza to the oven to bake another 2 to 4 minutes, until the top layer of cheese has melted and the crust is golden brown.

Remove the pizza from the oven, let it cool for about 5 minutes before slicing and serving.

Pizza Fridays: Chicken Parm Pizza

This is one of those pizzas that came about because of leftovers. I had some leftover crispy chicken from the Crispy Chicken with Egg and Arugula and some grape tomatoes that were starting to get wrinkly. I figured I'd add in the standard pizza sauce and cheese and chicken parm pizza was born.

Untitled

I had a few mushrooms leftover as well so I added those too, but I'm leaving them off the recipe below since they aren't part of a traditional chicken parm recipe.

Chicken Parm Pizza

1/2 pint grape tomatoes
olive oil
salt and pepper
1 ball of pizza dough
1/2 cup marinara or pizza sauce
4 oz mozzarella cheese, shredded
4 oz fresh mozzarella, cut into slices
1 cup crispy breaded chicken, cut into bite-size pieces
Flour, for dusting and rolling

Preheat the oven to 400 degrees. Arrange tomatoes on a foil-lined baking sheet; drizzle with olive oil, sprinkle with salt and pepper, and toss to combine. Cook for 20 minutes or until browned and bursting.

Place a pizza stone in your oven and turn the oven up to 550 degrees.

Lay a sheet of parchment paper the size of your pizza stone on a work surface. Lightly dust with flour. Roll or stretch the dough into a 12- to 14-inch circle on the parchment paper. Spread the pizza sauce in a thin layer over the dough, leaving a half-inch margin around the outer edges. Sprinkle the shredded mozzarella over the top, then add the pieces of chicken and roasted tomatoes. Top with the sliced fresh mozzarella.

Transfer the pizza to the hot pizza stone. Bake for 8-10 minutes, until the cheese is bubbling and the crust is golden brown.

Remove the pizza from the oven, let it cool for about 5 minutes before slicing and serving.

Pizza Fridays: 3 Cheese Rosemary and Pepperoni Pizza

I've been looking for new pizza recipes lately, so when Coleen mentioned loving Tara's 3 Cheese Rosemary and Pepperoni Pizza I knew I had to try it.

Untitled

All I can say is stop what you're doing and make this pizza. Now. I had a month's worth of recipes scheduled before I made this and I bumped it to the front of the line because I had to share it with you guys immediately.

Untitled

This is one gooey, cheesy, delicious pizza. I love the combination of mozzarella, fontina and ricotta. The spicy pepperoni cuts through the richness of the cheese and the rosemary is the perfect final touch. There's nothing more to say - insanely, ridiculously good.

3 Cheese Rosemary and Pepperoni Pizza
As seen on Smells Like Home

Sliced pepperoni
1 ball of pizza dough
1/2 cup marinara or pizza sauce
6 oz mozzarella cheese, shredded
6 oz Italian fontina cheese, shredded
1/4 cup ricotta cheese
1 tablespoon chopped fresh rosemary
Flour, for dusting and rolling

Place a pizza stone in the oven and preheat the oven to 500° F for at least 30 minutes.

Lay three sheets of paper towel on a plate. Top with however much pepperoni you want on your pizza. Cover with three more sheets of paper towel. Place the plate in the microwave and cook for 30 seconds. Check to see how much oil the pepperoni has released, then cook for another 30 seconds. This will release most of the oil onto the paper towels rather than your pizza.

Lay a piece of parchment paper the size of the pizza stone on a work surface. Dust lightly with flour and roll out the pizza dough into a 12- to 14-inch circle. Spoon the sauce evenly over the dough leaving a ½-inch border.

Top with the mozzarella and fontina cheeses. Dollop the ricotta by the tablespoon over the cheese then add pepperoni. Sprinkle the rosemary over the top.

Transfer the pizza on the parchment paper to the pizza stone. Bake for 5-10 minutes, checking often for doneness. Remove the pizza from the oven and allow it to rest for 5 minutes before slicing.
